Key Responsibilities
- Provide strategic culinary leadership and direction for all food operations across both hotels, ensuring the highest standards of quality, consistency, and innovation are met.
- Develop new menus and lead product development, supported by meticulous costing, market analysis, and trend awareness.
- Mentor, recruit, and develop a large culinary team, fostering a culture of excellence, collaboration, and continuous learning.
- Manage all financial aspects of the culinary department, including budgeting, cost control, waste reduction, and procurement procedures.
- Ensure strict adherence to all food safety, hygiene (SFA FSMS Lvl 3), and sanitation regulations (NEA/MOH).
- Collaborate closely with all Food & Beverage departments and other hotel divisions to deliver a seamless and exceptional guest experience.
- Drive culinary performance by reviewing guest feedback (VOG) and implementing targeted improvements.
- Oversee kitchen organization, equipment functionality, and the implementation of new technologies to enhance operational efficiency.
Qualifications
Your Proven Leadership Profile:
- A minimum of 10 years of relevant experience in a senior culinary management role, preferably within large-scale, multi-outlet hotel operations.
- Relevant Culinary School or College Diploma is preferred.
- Mandatory Certifications: Basic Food Hygiene Certificate, FSMS Level 3 (Singapore Food Agency).
- In-depth knowledge of Singapore’s NEA & MOH regulations, labour laws, and visa requirements.
- Strong financial acumen, with proficiency in Microsoft Office, procurement systems, and menu costing.
- Exceptional interpersonal, communication, and presentation skills, with the ability to influence and engage at all levels.
- A multicultural awareness and the ability to lead a diverse team with integrity, sound judgement, and a dynamic, hands-on approach.
