Key Responsibilities

As the Head Baker-Pastry Chef, you will be at the heart of our kitchen operations from the early hours. Your key responsibilities will include:

  • Leading the preparation of all our baked goods, pastries, and doughs, meticulously following each stage of our traditional recipes to ensure consistent, high-quality results.
  • Crafting and presenting pastries and breads with a beautiful, refined finish that meets our high visual standards.
  • Working collaboratively with other bakers to manage kitchen workflow efficiently, ensuring all products are ready for the day’s service.
  • Taking full responsibility for kitchen compliance with all occupational health, safety, and food hygiene regulations.
  • Overseeing daily kitchen setup, including checking the readiness and safety of all equipment and ensuring the workspace is impeccably clean before production begins.
  • Managing ingredient quality by checking stock levels, expiry dates, and accurately weighing components for each batch.
  • Adjusting production volumes and baking times based on sales forecasts, stock levels, and even daily factors like weather to ensure optimal freshness and minimise waste.
  • Preparing for the next day’s bake by cleaning, greasing, and organising all baking trays, moulds (such as for canelés and madeleines), and equipment.

Qualifications

We are looking for a dedicated professional with a solid foundation in French baking. The ideal candidate will possess:

  • A minimum of three years of proven, relevant experience as a Baker or Pastry Chef, preferably in a production bakery or high-quality patisserie.
  • A sound, practical knowledge of French pastries, viennoiserie, and artisan bread-making techniques.
  • Exceptional attention to detail, strong organisational skills, and a genuine love for creative, precise work.
  • A proactive willingness to continuously learn and replenish your professional knowledge.
  • The ability to work effectively as part of a team in our early morning environment (5:00 AM start).
  • Weekend availability is preferred for this role.
